Sausage, Mushrooms, and Feta Baked with Eggs

12-14 oz Berkshire sausage
16 oz. sliced mushrooms
1-2 tsp. olive oil, depending on your pan
1/2 – 3/4 cup crumbled feta cheese
8 farm eggs, well beaten
2 T half and half or milk
1 tsp. any all-purpose seasoning blend that’s good with eggs
Preheat oven to 375F/190C. Spray 9″ X 11″ casserole dish with nonstick spray.
Cut each piece of sausage in bite size pieces, then brown lightly in frying pan. In separate pan, heat olive oil and then saute mushrooms until they’re softened and starting to brown.
In casserole dish, put sauteed mushrooms, then sausage, then crumbled feta cheese. Beat eggs with half and half or milk and seasoning and pour eggs over the other ingredients, arranging sausages so they are evenly distributed throughout the dish.
Bake 30-40 minutes, until eggs are well set and barely starting to brown on top. Serve hot.
